White Beans with Tomato, Basil & Parmesan

Ingredients:    

1 T olive oil                  

1 cup chopped grape tomatoes

1 t minced garlic

1/4 cup fresh parsley                                                

24 oz can white beans   

1 t dried basil

1/2 cup shredded parmesan cheese

In non stick skillet saute garlic and olive oil over medium heat for 3 minutes.  Stir in beans, chopped tomatoes, fresh parsley and basil and cook about 7 minutes or longer.  Mix in parmesan cheese just before serving.  Serve with whole grain bread or brown rice.  Add your favorite vegetable to the mix for even more flavor! Try spinach and mushrooms. 

Nutrition info per 1 cup serving:  240 calories, 6.5 grams fat, 13 grams of fiber, 14 grams of protein and 32 grams of carbs.
