Spicy Asian Tofu & Summer Vegetables

Trying to get more soy protein in your diet but don’t know how to prepare it?  Try this dish!  It tastes like chicken, really!

Ingredients

1 pound of tofu cut into triangles

1 T sesame seeds

¼ cup light soy sauce

½ pound pea pods - julienned

½ c scallions

2 T crushed unsalted peanuts

2 T each minced garlic and ginger

1 T sesame oil

¼ cup red wine vinegar

1 tsp each cumin, chili powder garlic

Directions

Drain tofu. Cut block in half – width wise then cut into triangles.  Marinade in ¼ cup soy sauce for 1/2 hour.  Place on baking pan sprayed with cooking spray. Bake @ 350 for 20 minutes or until edges are brown.  Remove & let cool.  Bake sesame seeds in oven a @ 400 F for 10 minutes then sprinkle over tofu.  Chop scallions the julienne pea pods and carrots.  Place in large bowl .  Mix in remaining ingredients. Toss gently with cooled tofu.  Serving size ¾ cup.  Makes about 5 servings.
