Pumpkin Chocolate Chip Mini Muffins

Ingredients:

1 ¼ cup whole wheat flour
½ cup of wheat or oat bran
2 T wheat germ
¾ cup milled flaxseed
1 T cinnamon
1 t baking soda
¼ cup mini dark chocolate chips
1 cup 1% buttermilk
1 cup pumpkin puree
1 cup brown sugar
1 egg
½ cup All-Bran cereal
½ cup raisins
 

Preheat oven to 400F.  Mix all dry ingredients in a bowl.  Beat together liquid ingredients in a separate bowl.  Pour liquid ingredients into dry ingredients and stir until just combined.  Fill mini muffin tins sprayed with cooking oil.  Fill muffins with 1 heaping T of batter each.  Makes about 24 mini muffins. 

Per muffin:  105 calories, 3.15 g protein, 3 g fat, 4 g fiber, 8 g sugar and 125 mg sodium.
